Coffee Crumble Cake (Gluten Free + Vegan)

Happy Monday!!

I tried to wake up a little bit earlier today to get my morning started right: A cup of coffee, some coffee crumble cake and my notebook to jot down my to-do’s for the week. (I’m such a nerd when it comes to to-do lists, but I honestly can’t function without them!)

I’m typically an egg girl in the morning, but every now and then a pastry type food sounds so yummy with coffee. So, this morning I opted for some of the crumble cake I made yesterday.

When it comes to baking, I’d really rather just whip up something simple and know what ingredients are going into it. But, after I was accidentally introduced to the completely allergen free, all natural mixes by The Cravings Place, I am pretty much obsessed.

This company is so unassuming, but I promise you it is so. dang. good. I first tried the Ooey Gooey Chocolatey Chewy Brownie Mix and I couldn’t believe how tasty they were. I even got my very picky. Better Crocker only, brownie-loving Dad to make the swap.

This morning, after indulging in the their crumble coffee cake I was just as impressed!

Tips: Add cinnamon and vanilla to the topping before baking.

Here is the downside. It is not easy to buy their stuff! Unless you live in Oregon, that is (they are based in Bend, OR).

Do you guys have any other brands that you love that are allergen free like this company? I would love to know!

Have a great week everyone!

Quick and Easy Caprese Salad

healthy caprese salad

With my husband gone the last few days, prepping a complicated meal was the last thing I was up for. Actually, I don’t think I’m ever really up for something too complicated to cook (HA)… I’m all about ease, and even more so now that I’m a momma!

I don’t make this regularly, but when I do, I LOVE IT. I love tasting the flavors and how simple, yet tasty they are – especially blended together. Plus, this is pretty healthy if you ask me. And if you are a sans-dairy person, this would be great with some cubed almond cheese.
Caprese Salad
serves one

6 organic mozzarella bocconcini (or almond cheese for a vegan option)
10 organic sugar plum tomatoes
1/2 organic hothouse cucumber diced
2 tbs organic chopped fresh basil
1/2 squeezed lemon
+
A drizzle of olive oil and some sea salt and pepper to taste.

Mix ingredients together and eat! Simple, right?

Enjoy 🙂

California

carlsbad blogger Last week we took a break from the rainy Portland weather to catch some serious sun rays in Southern California. 80 degree weather to be exact. I love that my hometown is now a vacation for me. And I’m amazed at how much more I appreciate the things I took for granted growing up there.

Our first stop was Mexican food and the BEACH. Or, as I apparently inherited from my Portland living, “the coast.” Parker couldn’t believe his eyes when he saw the ocean. I’d imagine he was thinking that he was about to hop into the biggest bath he’s ever seen. 🙂

Anyway, after our brief (and very important) stint at the beach in Carlsbad, we headed out to Temecula to stay with Tyson’s family in wine country. This was when our little happy, sweet boy turned into a monster. Parker? A monster? Yep.

I’m going to go ahead a say that this was just due to being out of his element because I can thankfully report he is back to his sweet, kind self. But, we endured 5 days of one completely different kid. Picture: Tantrums in public, hitting everything and anything, NOTHING making him happy, painful car rides. At one point Tyson and I just agreed that this was the new norm and possibly payback since he has been such a great baby.

Then, day 5, he was back. Fun, silly, happy Parker baby. Although I wanted to scream at the top of my lungs many times, I didn’t. I just kept thinking in my head, show him love and patience and KEEP YOUR COOL, Linds.

Okay, back to vacation…

Blogging about the resort at pelican hill

We spent most of our time in Temecula, but also made time to head to Newport Beach for a night. We stayed at the Resort at Pelican Hill, and can I just say, WOW. I’ve stayed at a some really great hotels, but this one was pretty spectacular. They didn’t miss a single detail in their guest rooms and the resort is so beautiful and QUIET. It was great as a family, but I can only dream about going back just as a romantic overnight with Tyson.

The location was also great. Great as in, next to the beach, close to Zinc Cafe and also close to my favorite outdoor mall, Fashion Island.

It was great to just spend time outside and have no agenda.

It was also really nice to workout OUTSIDE…

Leoness Winery Dinner Blog

On the way back to the airport we had an afternoon to kill, so we headed to Little Italy to walk around and grab some lunch. Can I just say… wow! That area is finally cool. It has seriously evolved into the cutest neighborhood.

And it really sealed the deal that they have Cafe Gratitude there. SOLD!

I loved how they designed this location… Well done, CG!

Here are my top picks for things you’ve got to do while in SoCal:

Temecula Wine Country:

1. Hot Air Balloon Ride.
2. Leoness for music, a glass of wine and then dinner.
3. Ponte Winery and Wilson Creek Winery for tastings (we loaded our suitcase with Wilson Creek’s Almond Champagne).
4. Lodge at South Coast Winery Resort
5. Go for a nice walk or run outside.
6. Head to downtown Temecula and have lunch at Goat & Vine.

Newport Beach:

1. Stay at the Resort at Pelican Hill
2. Spend all day their Crystal Cove Beach.
3. And then spend another full day at their pool.
4. Standup paddle board.
5. Hike.
6. Catch brunch at Zinc Cafe.
7. Spend an afternoon shopping… you deserve it!
8. Rent bikes and ride along by the pier.

Downtown San Diego:

1. Airbnb a place in Little Italy: Option 1 | Option 2
2. Eat brunch at Cafe Gratitude
3. Grab panini’s to go at NAPIZZA (take them to the waterfront)
4. Ride bikes to Seaport Village
5. Walk through Balboa Park (my favorite place) and check out the museums.

What are your favorite things to do down there? I need more suggestions for the next time we head down there. I’m thinking we might actually spend longer downtown San Diego now.  I also want to go out to Joshua Tree next time. I can’t believe I’ve never been there!

To Valentine’s Day

In honor of Valentine’s Day, not only did I make sure we had pink roses in the house, but I also purchased pink rose champagne, got a pedicure with – wait for it – light pink nail polish and (not finished), have yet to take off my awesome pajama set that just happens to be pink. When being a female is the minority in your house, you’ve really got to get in as much girlie as you can, when you can. So I decided to capitalize.

Do you love or hate Valentine’s Day? I completely understand why people don’t like it. If you are single, it is just another way to remind you that, well, you are single! And if you are with someone, you ask yourself, should love really be celebrated just once a year? I totally get it. But for me, I’ve never really let it bother me either way. Maybe because I love the chance to celebrate anything. But truly, even when I was single, I treated myself like gold on Valentine’s Day. So I guess I remain impartial. BUT, its always a good reminder to not forget to love on yourself or someone else.

My husband and I said I love you with boat loads of sushi Friday night (can’t really handle the “day of” crowds). This was our first time going to Bamboo Sushi in NW Portland and we were pretty dang impressed. And of course, after we were done ordering just about everything they had on the menu, we just happened to walk into Salt and Straw next door. I don’t really understand how that happens, but I swear there are spiritual ice cream forces that lure you in. I didn’t even want ice cream, but walked out with scoop and a pint for later. Since I have given up gluten and dairy for a bit, I devoured the dairy-free, Missionary Chocolate’s Coconut Cinnamon Chipotle Rocky Road. Say that 5 times!

As for gifts- we haven’t opened them yet. I didn’t really feel that having Tyson open a present from She Bop would be super appropriate in public. LOL. I promise you it wasn’t anything too wild. Really, I wish I was cool enough to own some of the things they have in that store- which, by the way, is just about the classiest place around for a store like that.

Anyway…

On actual Valentine’s Day we will be hanging with our family. And taking at least 2-3 naps.

Happy Valentine’s Day to YOU! However you celebrate it, make sure to give yourself some extra TLC.

Turmeric Toddy

Whether you have a cold or just need a boost of nutrients, this turmeric toddy is going to be your new best friend. I try and have at least one per week. And I’m sorry, but this one is sans booze. Save that for a great cocktail.

Based on extensive research and one incredible Duke study (here), turmeric is one of the most powerful spices we have and has been used by Chinese and Indian medicine for thousands of years. Another powerhouse related to turmeric? Ginger. I could seriously eat ginger ALL. DAY. LONG.

So what happens when you mix the two together and add in a dose of vitamin C and some anti-bacterial, mineral rich raw honey? Well, you get one major boost to your immune system.

Turmeric Toddy

1 pure ginger tea bag (you are welcome to dice up your own ginger for this too)
1 mug full of hot water
1 or 2 tablespoons of turmeric paste (see below)
1/2 of an orange, squeezed
1/2 tsp lemon juice

Turmeric Paste:

1/2 cup raw honey
1 1/2 tablespoons turmeric powder

Mix together well with a spoon and store in a jar

Directions:

Make the ginger tea as normal (in a tea cup, mix hot water with the tea bag). Allow to sit for 3-5 minutes.

Squeeze the orange and pour in lemon juice.

Mix together 1-2 tablespoons of the turmeric paste (depending on sweetness preference).

Sip and enjoy!

Fashionably Late to the New Year

new cascadia bread, sunshine burgers, suja juice and purely elizabeth granola

While physically it is now three weeks in, I am mentally just starting the new year. It has been chaos in our home. Lot’s of exciting changes and things happening, but I haven’t had time to sit and really focus in on what I want out of 2016.

I personally like making goals and/or things to strive for each year. I like to look back and say, “Okay, what did I accomplish?” I also go through these thoughts on my birthday each year, because technically those are really what hold you accountable. And well, since I’m going to be 30!!!! this year, I realized that I have a lot to think about.
One of my most important goals this year is to shop more at our local healthy grocery store, New Seasons and/or Whole Foods. I’ve been a big fan of Trader Joes for a long time, for many reasons. Its affordable, they have good organic options, and well…they are awesome. However, I find myself there buying non-local and non-seasonal foods. Not to mention, I tend to buy more items that are packaged.

So far this year, we’ve averaged an extra $15/per week on groceries by shopping more local, seasonal and organic. And frankly, I think that is quite reasonable considering the long term effects you gain.

As for some other goals:

-Eat less animal products
-Eat less sugar
-Travel more
-Create a more flexible schedule so I can spend more time with my family
-Take more photos
-Fear less, strive more
-Find something new and fulfilling to take on

Happy belated New Year everyone! May this be your best year yet!

Rosemary + Pear Sparklers (and a really yummy appetizer spread)

A festive cocktail paired with some tasty appetizers, family or friends and a little cookie decorating are the perfect way to enjoy the holiday.
Living in Portland, you are in no shortage of a really good cocktail (or food, according to the new Washington Post article). So, I typically opt for wine at the house and wait to have a good mixed drink when I’m out.

But since it’s Christmas and I’m already certain I’ve gained about 5 extra pounds, I decided to make a healthier cocktail to pair with appetizers and let’s just say, I was quite impressed. Sometimes home is my favorite restaurant.
a portland local, gluten free appetizer spread.

NW Local Appetizer Spread

New Cascadia baguette
Chop meats
King Harvest hummus
And a mix of Oregon and Washington cheeses

Rosemary + Pear Sparklers
makes about 6 cocktails

Gin (or Vodka if you prefer)
2 pears
1 1/2 oz of lemon juice
Maple syrup
Prosecco
5 sprigs of rosemary

Directions:

To make the puree:

In a blender, add in…

Peeled and sliced pears
1 1/2 teaspoon of fresh rosemary
1 1/2 oz of fresh lemon juice

Puree well and set aside or pour in a glass.

To prepare the drinks…

Fill a martini shaker with ice.
Pour in 1 1/2 oz of gin and 1 1/2 oz of the pear puree
Add 1 tsp of maple syrup (more if you like it sweeter)
and shake well!

Take either a martini class or a whiskey glass and pour in glass, leaving about a half an inch for prosecco.

Pour in prosecco and stir in gently.

Place one sprig of rosemary in the drink for a garnish and enjoy 🙂

Wishing you and yours a wonderful holiday!
