Anxiety

You are about to get to know me really well guys.

When someone recently said that “my life looked so great (totally referencing to what they see on social media),” I thought to myself… well, yes, mostly it really is. I mean, I don’t really curate the things I do for social media. I actually do those things in “real life” and then try and just make what I’m already doing look pretty for the camera. But, it’s easy to look at pictures of everyone’s “happy moments” and convince yourself that your life isn’t nearly as awesome as theirs (I’ve done this so many times). And this is the troubling part about social media. 
Anyway, I’ve been meaning to write this post for some time, and hearing those words prompted me to get it done. Because, you know, we are all only human. I’ve got shit I deal with, you’ve got shit you deal with, and we all have shit we deal with. The stuff you don’t always see on social media. Pardon my language.

For me, anxiety has been a huge, shitty (haha- ok, done cursing) beast to deal with. And I’ve been dealing with this since my early 20’s. I even remember the birth, so to speak, of my anxiety. It basically came out of nowhere. I had a really bad stomach ache after returning home from a trip to Costa Rica when I was 20. I started semi-panicking that I caught something while I was there. That then led to my heart beating irregularly and before you knew it, I was at the doctors office freaking out, making sure I was okay.

We did some testing and the doctor said I was fine, but those following few weeks I kept getting a number of “strange” symptoms. Real symptoms. So, I went back to a different doctor, only getting close to the same feedback, except this doctor wanted to explore more possibilities. Blood tests, heart monitors, an ultrasound… you name it. Each week from that point on, it was a new symptom or a new sensation that brought on another fear. When I say I’ve seen just about every doctor out there, I’m not kidding. 
On the bright side, this is where I began my journey and interest into natural health. I was scared, and this lingering fear of something being wrong with my body frightened the crap out of me. Every doctor had a pill for my symptoms and having to take medication only further perpetuated my fears. So, I took matters into my own hands and tried to heal myself. 
I started to eat really well, exercise often and I overall started feeling so much happier and healthier. You can’t deny the power of eating well and exercising. But, the anxiety was still there. Just more manageable
The anxiety I deal with is a bit different now. After Parker was born it turned into more of this constant worry. Like CONSTANT… to where I get this overwhelming fear that something bad is going to happen way too often. Like, maybe we shouldn’t go on that trip… WHAT IF? What if THIS happened, what if THAT happened… and then I start going through the motions like it is real life and visualizing the worst case scenario always. Of course I still have my hypochondriac moments too, but I feel like I am a little more realistic about them. I’m better at helping myself not overthink it these days.

This all might sound crazy to some of you, and to others, you might know exactly what I’m talking about. I’ve realized that anxiety comes in all shapes and sizes. I don’t know everything there is about anxiety, but I will tell you that there are some things I have done that have really helped me manage everything. Although anxiety definitely influences my wellbeing, I still do almost everything I want to do. It isn’t debilitating for me like it has been in the past. I don’t take prescription medication and I don’t go to a psychologist any longer (I’ve done both and would highly suggest that you start with a mental health professional or with a naturopath like I mention below). In fact, I don’t even think most people I know, know that I struggle with this. Ultimately, I’ve just found that for my own journey, what I do on a daily basis has helped immensely and hopefully you might find some of these simple things helpful too.

Here are my top tips to help with anxiety:

1. Eat well: Feed your body the right foods to help support your mood.  Less processed foods, less sugar, less alcohol, less coffee and more healthy fats, superfoods and warm foods. This is hands down, the most important tip.

2. Exercise: I actually turn to exercise if I’m feeling really anxious. It gets your mind off of “your mind” and onto something else. Cardio, weight training, yoga, whatever it is. I can say, I’ve never felt worse after exercising. ; )

3. See a Naturopath: I whole heartedly believe in the care given to each person by an ND. I also believe in the power of natural medicine and the referrals one can give you to therapists and other providers.

4. Acupuncture: Getting this twice a month has done wonders for my anxiety. It also keeps my whole body feeling healthy. Just make sure you find a good one! I’ve seen a few mediocre acupuncturists.

5. Do more: Contrary to what you most likely want to do, following through with the things that make you anxious really helps. It isn’t easy getting yourself to do it, but when you realize you can do things that you are fearful of, your fear of doing it subsides. Hence, the camping in the middle of nowhere photo above… looks great, was great, but wasn’t easy for me.

6. Breath work and meditation: The 4-7-8 breathing exercise from Dr. Weil is one of my favorites. Don’t knock it until you’ve tried it for at least a week!

7. Supplement: There are some great supplements out there that help ease anxiety and/or are important for your mental health. L-theanine, B vitamins, probiotics, fish oil, and magnesium are some of my favorites. Talk to a Naturopath or a health professional about a supplementation plan.

8. Have a supportive partner, friend or family member: My husband has been such an integral part in helping me manage my anxiety. He listens when I just want to tell him what’s going on in my head, never judges, but always encourages me to recognize that much of what is going on in my mind is anxiety. He constantly urges me to push through my fears, which is exactly what I need. If you don’t have someone that can help tell you “you are ok” I’d highly recommend reaching out to your partner, friend or family member to ask them to be that person for you.

9. Get educated: I would strongly suggest reading books about mindfulness. A couple of my favorites are The Power of Now and Spontaneous Happiness. There is also a class currently on Mind Body Green —> click here.

10. Unplug: Spending too much time on social media, watching or reading the news and browsing the internet can really fuel anxiety. Do yourself a favor and take a break from the things that don’t serve you.

Most importantly, don’t be afraid to get help. In fact, I highly suggest you don’t try and figure it all out on your own. There was a point in my life where I had to take prescription medication just to calm me the heck down. And that was what I needed at that point in my life. Be okay with accepting the things you need to get you to a better place.

Pumpkin Pie Cookies (Paleo)

It’s that time of year! Seriously, I don’t know about you, but I feel like I come alive in the fall time. I always have. The cozy, not too cold weather; the fruits and vegetables that are in-season, the colors, the smells, the comfy clothing, the excuse to do nothing at all.

I just love it. 
I also love the pumpkin craze. Yep, I’m one of those… I like to stock up on as many cans of pumpkin I can possibly get my hands on. And maybe some pumpkin yogurt, coffee, crackers, hummus. You name it.
So, naturally, I had to kick the season off right by making some pumpkin pie cookies. I love these cookies because I get my sweet tooth fix and just so happen to feel great after having one. I also don’t mind giving Parker one since the ingredients are so simple.


Pumpkin Pie Cookies (Paleo)
makes about 10 cookies
1 cup of peanut or almond butter
1 cup of blanched almond flour
3/4 cup of pumpkin puree
1 egg
1/3 C. coconut sugar
1/2 tsp of baking soda
1 tsp of vanilla
1 1/2 tbs of pumpkin pie spice
1 pinch of sea salt
Directions:

Preheat oven to 350 degrees.
Combine all of the ingredients in a medium size mixing bowl and mix well.
Line a baking sheet with parchment paper.
With a spoon, scoop out a heaping spoonful of mix per cookie. 
Mold the cookie into a ball with your hand, place it on the parchment paper and lightly press the cookie down to slightly flatten it.
Optional: sprinkle a pinch of coconut sugar on top of the cookies.
Bake for 12-15 minutes and enjoy!

Brasada Ranch Getaway

Last weekend Tyson, Parker and I grabbed both sets of Grandparents and headed to Brasada Ranch for some much needed relaxation. This place has been on my bucket list ever since I moved to Portland, so you can imagine the anticipation. 
Prior to our stay, we organized our itinerary: horseback riding, golf for the guys, spa time for Tyson and I, and of course… as much time as possible at the pool. I packed my camera and some books, making a commitment to myself to be off social media (except to post the fun photos of course) and be away from my email. Trust me, you don’t want any distractions while you are there. 
As we pulled up to the ranch retreat, we received our keys to our 3-bedroom cabin from the main lodge and headed to our “home” for the next few days. Pulling up to our cabin, I felt like it was too good to be true. We were greeted by chirping birds, sunshine, a light breeze and the smell of juniper and sage; a recipe for a great vacation. 
After we all got settled in, the guys headed right out for their tee time. 
These three guys were like teenage boys at an adventure park. With permanent smiles on their face, I think it is safe to say they enjoyed the world-class golf course, very much.
Meanwhile, my mom and I enjoyed some horseback riding.

We had the most amazing trail guide with us that day. She took us up and around the backside of Brasada where you get to see some great views of the mountains and soak up all the natural settings around you. 
I find riding horses to be so peaceful. 

The following day was spent swimming in the pool until our fingers pruned. Tyson insisted on taking Parker down the water slide. The overly cautious mom in me said, “heeeeck no,” but ended up giving in. Needless to say, Parker was safe and one ridiculously happy camper.

The pool at Brasada is EXACTLY what we have been looking for in the Northwest. I’m from San Diego where there is no shortage of awesome pools and it is something I’ve missed a lot since moving to Portland. If only Brasada were closer, you would find my family posted there all summer long!

Next stop after the pool was some spa time for Tyson and I. I haven’t been to a spa for a massage in a long time (I usually gravitate toward facial treatments), so this was SO needed. I opted for the Sleep Well massage, while Tyson chose the Athletic Recovery massage. I’m a pretty picky spa-goer (I worked at one for 6 years!), but I was incredibly impressed with the services. My massage felt so luxurious. They also have the coziest robes for you and the softest linens on the massage table. I’m a details person, so that meant a lot to me! 
My husband went for more of a productive massage; he’s been pretty sore from running a lot and other lifting. He was so happy with his and felt like he got a lot out of it, which is exactly what he was hoping for. 

One extra great touch? They brought us cocktails after our massages. I don’t think it gets better than that… ; )

The rest of the evening was spent hanging with our family. We all went out for dinner at Brasada’s Ranch House which was perfect for a family. I went for their special which was a shrimp risotto and devoured it. All of us were super impressed with the food.

One thing you have to do, is make sure you grab some of their packets of s’mores and head to the fire pit on the property at sunset.

A desert sunset is breathtaking.

I’m really looking forward to coming back to this place. In fact, our whole family is too. It’s one of those places that you want to keep as your summer family getaway every year. However, I kept telling everyone how I would love to see this place in the winter too. For such a kid-friendly place, you wouldn’t believe how peaceful it feels. We all fantasized about living on the property the whole time we were there, so I think it’s safe to say that we thoroughly enjoyed ourselves.

Healthy Food Guide: Boise

Boise completely exceeded my expectations. Mark my word, 5 years from now this city will be THE SPOT. Until then, I will continue to enjoy the calm before the storm.

One thing that was pretty impressive to me, and very Portland like, was their dietary options. You can find great vegan, gluten-free, and dairy-free options just about anywhere. I also really liked their use of fresh produce and meats from local farms; and of course, their seasonal dishes that are everywhere. Go Boise! Which, by the way, is pronounced “boy-see,” I learned that quickly when I kept saying “I love “Boy-Z!” : )

Best Healthy Breakfast Spots

1. Wild Root Cafe (Vegan/Gluten-Free Options): Whatever you do, don’t leave Boise without trying this place, especially if you are a total health nut. I loved the egg dish, Wild Skillet. They use a cashew “cheese” and you can even order the dish with vegan eggs (I just ordered regular, cage-free eggs). Oh, and their avocado toast! I want to eat that every.single.day. Seriously!

2. Fork (Vegan/Gluten-Free Options): This spot is a sure bet for brunch. They pride themselves on local, sustainable foods (some they get the same day at the city market!!). They have so many great options and it is a true Northwest fare.

3. Bacon (Vegan/Gluten-Free Options): This is the perfect spot to go if you have a healthy foodie AND a meat-eating- ‘don’t really care if it is healthy or not’ foodie. It is a great place to grab brunch with a group and their Bloody Mary’s are the best in town! I ordered The Poser for breakfast, which was a nice, light, egg white dish and it was deeeelicious.

4. Slow by Slow (Vegan/Gluten-Free Options): This is the cutest little coffee shop with some great pastries and quick things like granola and tasty, local kombucha.

5. Java (Vegan/Gluten-Free Options): A great place for either breakfast or lunch. They’ve got great drinks and super tasty breakfast burritos.

Best Healthy Lunch Spots

1. Bleubird (Gluten-Free Options): This was one of my favorite places for lunch in Boise. They change their menu depending on the season, but I highly recommend the grilled cheese (insert excited emoji). This is great spin on a traditional deli!

2. Boise Co-op (Vegan/Gluten-Free Options): This is such an amazing Co-op! If you want to grab something on-the-fly and affordably, you can find just about anything you would want here.

3. Jenny’s Lunch Line (Vegan/Gluten-Free Options): You will find some delicious soups, salads and sandwiches made from scratch here. They change their menu monthly too, so it is always fun to see what is new and seasonal here. This place is so yummy!

Best Healthy Dinner Spots

1. Bittercreek (Vegan/Gluten-Free Options): I loved this place! It is the perfect spot to go with a group or girls and guys. Everything we ate (and drank) was super tasty. I ordered an Old Fashioned and the veggie burger and was one happy camper!

2. Juniper (Vegan/Gluten-Free Options): The ambiance and decor here is what first sold me, but their menu seals the deal! This is the perfect dinner date spot. They have really good, crafty cocktails and are also extremely food allergy friendly.

3.State & Lemp (Vegan/Vegetarian Options): This is the best spot if you are looking for a culinary experience. This is a reservation-only, prixe fixe menu and features a really beautiful Northwest cuisine. It doesn’t get any fresher than their food. And (bonus), they are extremely accommodating to anyone with dietary restrictions!

4. Barbacoa (Vegetarian/Gluten-Free Options): This is a really great dinner option (with a great view). It is a bit on the pricey side, but you get a ton of food, so make sure you go there hungry! I would highly suggest one of their seafood dishes.

My 12-Year-Old Style

It’s a good thing I work at an athletic modeling agency where “athleisure” gets a total green light, because I don’t think I could ever have enough trainers. I was pretty excited to finally find a good pair of light weight white ones. I am a big fan of the classic looking tennis shoes and Brooks nailed it with these!

And overalls… these are still my jam lately. I feel like the older I get, the more my wardrobe resorts back to my youth. Most of my outfits these days are a glimpse back at my 12-year-old self. 

Cauliflower "Rice" with Swiss Chard and Crimini Mushrooms

Ever since Trader Joes started selling the frozen organic riced cauliflower, I have been hooked! This is such a simple, lighter, starch-less option to pair with dinner and if made correctly, I would take this over actual rice any day. 
Oh, and mom tip: It takes about 8 minutes to make (win!). I don’t have time for complicated meals anymore!
Anyway, have fun with this stuff! I mix up my cooking style with the “rice”, depending on what is in the fridge and what I feel like. I also love make it with turmeric and shaved brussel sprouts. And even better, Parker loves it too. 

Cauliflower “Rice” with Swiss Chard and Crimini Mushrooms

1 bag of frozen cauliflower rice OR 1 head of cauliflower riced by food processor
2 C. swiss chard, chopped
1 C. crimini mushrooms, chopped
1 Tbs. grapeseed oil 
1 Tsp. garlic powder 
1 Tsp. sea salt + extra if needed
2 shakes of cayenne pepper
Directions:

Turn stove up to medium-high heat
Add cauliflower rice and mushrooms
Sprinkle a pinch of sea salt over rice and mushrooms
Cook for about 5 minutes
Add in oil, then the swiss chard
Add in garlic, sea salt and cayenne 
Cook until soft (about another 3-5 minutes)
Take a taste test to see if you need anymore salt
Turn off heat, serve and enjoy!

Healthy Food Guide: Portland

Well, it’s no secret that Portland is just about the best town there is when it comes to food. We pretty much have anything and everything here. Which also means a lot of healthy options, but also a lot of not so healthy ones.

Below, I’ve put together a list of my favorite healthy places to eat in Portland. And I give major props to this city for gluten-free and vegan options just about anywhere (even bars!).
Best Healthy Breakfast Spots

1. Prasad (Vegan/Gluten-Free Options): Now with two locations, this place is SO good. The Classic Oatmeal or Chili Scramble is a must-try!
2. Kure (Vegan/Gluten-Free Options): This place is another great option at any point during the day. Their juices and smoothies are SO tasty and packed with nutrients. My personal favorite is the Lush Life smoothie. I’ve also heard rave reviews about the Hangover Helper smoothie and that it will help you feel like a different person. I wouldn’t know, I’ve just heard about it… ; )
3. Bob’s Red Mill (Vegan/Gluten-Free Options): Yes, this is at the HQ where they make all of the awesome Bob’s Red Mill products. I personally love the museli and yogurt, but there are loads of options and the food is extremely affordable. 
4. Radio Room (Vegan/Gluten-Free Options): Back in my single days, this spot was my favorite place to go on the weekend after a night out. They have a lot of options for carnivores and herbivores, as well as great gluten-free options. My go-to? The Classic Rocker Scramble and the pint Mimosa with blood orange (yes… I repeat… pint!). YUM.
5. Fern Kitchen (Vegan/Gluten-Free Options): Tons of healthy, tasty options and they use all local and organic produce. I love the “Eggs Your Way” with tempeh and New Cascadia toast.

Best Healthy Lunch Spots

1. The Whole Bowl (Vegan/Gluten-Free): I think if I had to eat a single meal for the rest of my life, it might be this. And yes, there is just one bowl on the menu and you can order it “veganized” or “full loaded.” Either way, it is so dang good. 
2. Harlow (Vegan/Gluten-Free): This is the sister to Prasad and just as tasty. I love their bowls; specifically the Urban Bowl. I also can’t leave there without ordering their Turmeric Toddy (hot). This place has a lot of space too, so I like to grab my computer and get some work done there from time to time. 
3. Jade  (Vegan/Gluten-Free Options): Ahhh, this place! I honestly can’t say enough good things about this spot. This place is a unique twist on veitnamese and thai food, but it is so much lighter and healthier than most places. The Minced Chicken dish is my go-to. And you have to order the sweet rice with mango for afterwards. Mmm!
4. Garden Bar  (Vegan/Gluten-Free Options): If you are a salad-for-lunch kind of person, this will be your new favorite. The salads on the menu are great, but if you prefer to mix your own, you can do that too. The Bliss-Detox salad is excellent!
5. Cultured Caveman (Paleo): This place is a great spot, especially if you eat a paleo diet! I will warn you, it is pricier than most lunch spots, but well worth it. Make sure to grab some bone broth while you are there. They also have amazing chicken tenders for kiddos!

Best Healthy Dinner Spots

1. Bamboo Sushi  (Vegan/Gluten-Free Options): This is actually the first sustainable sushi restaurant in the world and let me just tell you, this spot is never a disappointment. Make sure when you visit, you order everything because everything is so delicious. I also really love their happy hour menu. It’s no wonder this place is so popular!
2. Farm Spirit (Vegan/Gluten-Free): This is a multiple-course dinner place, so you are going to have to reserve your spot and pay ahead of time. But don’t worry, this is totally worth it. You are not only getting incredible food that just so happens to be vegan, you get to enjoy an amazing culinary experience. 
3. Andina  (Vegan/Gluten-Free Options): Talk about a culinary experience, Andina is just that. I recommend ordering a bunch of tapas to try. My favorites are the Quinoa Con Verduras and the Atun Fusion. They have a lot of fresh and healthy options, which is why I like it there so much. Oh yes, and don’t forget to order a Pico Sour! They are the BEST!

4. Park Kitchen (Vegan/Gluten-Free Options): If you are looking for a great Northwest style cuisine, you won’t be disappointed here. They have plenty of healthy, seasonal options and a great happy hour.

5. Blossoming Lotus (Vegan/Gluten-Free): This place is deeeeelicious. I highly recommend the mac n’ cheese and a slice of raw cheesecake. Everything here is organic and vegan.

6. Higgins (Vegan/Gluten-Free Options): Don’t be misled by the traditional decor; this place is great! It isn’t up there as the hippest spot in Portland, but this is a great, classic Portland restaurant and because of that, it has a lot of charm. They are known for their Northwest cuisine and using locally sourced ingredients. I recommend ordering their seasonal fish dishes.

7. Luc Lac (Vegan/Gluten-Free Options): This place has, hands down, the BEST pho in town. I will just leave it at that!

Best Healthy Bars/Breweries:

1. Sweet Hereafter (Vegan/Gluten-Free): Ahhh, this place is great for a good drink and a vegan meal. Definitely not your typical bar food. My go-to? Old Fashioned with a Jamaican Bowl (ask for a brown rice tortilla on the side to make a burrito out of it).

2. Wilder  (Vegan/Gluten-Free Options): I love this place. It has a great date night vibe and the food is super tasty. It is the perfect spot to go if there are vegetarians and/or meat eaters in the group. What to order? Wilder burger and ask for it over polenta. And don’t forget to order one of their craft cocktails. There are so many good options.

3. Ground Breaker (Gluten-Free): This is a 100% gluten-free brewery. It also has some really great healthy food options for all dietary needs!

4. Bye & Bye (Vegan/Gluten-Free): I like to head here with a large group of friends. The food is super tasty, they have great vegan/gluten-free options, and the drinks are always strong. My drink of choice: Lefty’s Prayer. Food pick: Brussel bowl. 

5. Interurban (Vegetarian/Gluten-Free): This is one of my favorite bars in Portland. They have the best old-fashioned’s and such great food. You can find a lighter meal here or a heavier one; either way, your belly will be happy : )

Best Dessert Spots:

1. Back to Eden (Vegan/Gluten-Free): This is my absolute favorite dessert spot in Portland. No matter what your food sensitivity might be, they have a dessert for you! My favorite? The dairy free yogurt in a gluten-free waffle cone.

2. Eb and Bean (Vegan/Gluten-Free Options): You will not be disappointed here. This is an organic yogurt spot that also has some great dairy-free options.

3. Petunias (Vegan/Gluten-Free): This bakery is completely vegan and gluten-free, and is my go-to for office treats, birthday treats, etc. Their black and white cake is out of this world!

I am always on the search for new, healthy places to indulge. I will keep this list updated as I find new places. And as always, please share your favorites with me! 

Toddler Days

I can’t even believe how quickly time is flying by. I just want to hit pause and replay on so many of these moments. But here he is, our big 19 month old, just becoming a young boy before our very own eyes.

We really started to see him totally evolve into this little squish of a man at around 14 months. You know, a little attitude here and there, some very sneaky behaviors and a look on his face that screamed “I know you think I don’t know what’s going on here because I’m only 29 inches, but I know a lot more than you think I do.” Most parents can probably relate, but it is just incredible to watch them really start to develop. I mean, the moment he started using a fork on his own you would have thought we just won a car or something.

Gosh, parents can be such nerds in like, the absolutely best way possible. 

Anyway, the other side of all of this greatness are those other developmental things that really throw you off. For instance, I really try and make it a point to have sit down dinners at the table. I think it is so important for kiddos, but I also know you really have to try and make a good point to do so. Well, (un)lucky for us, our dining room table just happens to be on top of carpet. And me, mom over here, loves to make dinners that involve stuff that stains carpets (turmeric anyone?). So get a toddler over there and watch how fast that dinner goes on the carpet, their clothes, the walls, etc. I know many of you are with me right now…

So, what happens next? It’s time to discipline.

And this is where we are currently at. We’ve gone from time-outs and firm voices to re-directing and just completely ignoring. We try our hardest to hold back our true frustration when once again, Parker throws something at our face or screams (this is his new favorite) at the top of his lungs in the middle of a store. And while we’ve toyed with all options, we’ve found that re-directing has been the most effective so far. So, that is what we’ve tried to be consistent with, but let me tell ya… that takes some serious adult discipline. And sometimes adulting is not easy.

Okay, so I ask you… what are your tips and experiences? I have no ego when it comes to parenting. I love hearing everyone’s wisdom and tips/tricks. The food throwing is my least (current) favorite so tips on tackling that would be GREAT.

Otherwise, let me tell you the best part of this stage so far: the love.

Obviously I’ve always loved Parker, but the fact that now he is learning to reciprocate that love more outwardly is the best feeling. I will drop anything, at any point of my day just to hold him and cuddle him. It makes me so happy to see him be so affectionate. And I’ll take kisses on the lips ALL DAY LONG for as long as he will give them to me! (Did you ever read that backlash Victoria Beckham got for kissing her daughter on the lips? read here).

These days can be tough, but dang they are fun.

I love mixing watermelon in salads during the summer. I know it might sound a little strange, but once you try it, I can assure you that you will like it! This particular salad is inspired by one of my favorite chef’s, Ina Garten, and is one of my go-to side dishes for summer parties. In fact, when I’m trying to make a sure-bet dish, I always turn Ina; she really is the best.

Watermelon, Arugula and Feta Summer Salad

6 C. arugula
2 C. seedless watermelon (diced in cubes)
1 C. crumbled feta
1 C. chopped mint leaves

For the dressing:

1/4 C. fresh squeezed orange juice
1/4 C. fresh squeezed lemon juice
1/2 C. olive oil
1/4 C. minced shallots
1 tbs. honey
1 tsp. coarse sea salt
1/2 tsp. ground black pepper

Directions

In a medium size bowl, whisk together the orange juice, lemon juice, oil, shallots, honey, salt, and pepper.

Place the arugula, watermelon, feta, and mint in a large bowl. Add in dressing (enough to coat the salad lightly). Add in extra sea salt or pepper if needed.

Camping for the Weekend

With all this crap happening in the world, escaping for the weekend was exactly what I needed. I don’t know about you, but I literally can’t seem to think of much else lately. I’ve taken some time away from social media and the news, which has definitely helped. And while doing so, I’ve clung on to spending time with my family (my happiest place) and being outdoors (the runner up).

So without a question, a camping trip seemed like the most logical idea.

And I will say, all is right with the world in the secluded mountains : )
