The Nourishing Bowl

I have been making this bowl like crazy lately! It’s simple, delicious and nourishing.

Here is my tip: Prep the ingredients on a Sunday and make enough to last 3 days of lunches during the week.

The Nourishing Bowl

Ingredients:

Quinoa
Kale
Watermelon Radish
Chicken
Turmeric
Sea Salt
Pepper
Chicken Broth
Trader Joe’s Green Goddess Dressing
Optional toppings: Avocado, sprouts, and hempseeds

Directions:

Cook the quinoa as directed on the package.

Meanwhile pan grill chicken (or purchase a rotisserie chicken).

Then, saute kale in a little chicken broth, sea salt and turmeric.

Wash and slice the radish.

Once everything is cooked, prep bowl with ingredients and top with the green dressing.

*pre-make 1-2 other bowls in tupperware but don’t add the dressing until you eat them.

My Six Favorite Dinner Party Themes

I am the biggest sucker for a good dinner party with friends or family. Having guests over for dinner is something that I enjoy more than anything, but I also know it’s not everyone’s favorite. I have friends that have a nervous breakdown at the thought of having to throw a dinner party at their house. So, hopefully these ideas will help inspire you for your next party! Sometimes the less extravagant, the better.

1. Around the World Potluck: Hate cooking? Go potluck style! This is such a fun way to let everyone bring their favorite dish (my go-to is Shepherd’s Pie thanks to my English heritage). Just make sure to divy it up: salads, appetizers, entrees, dessert.

Playlist options: Jazz or bossa nova

2. Taco Bar: This is my go-to! It’s affordable if you are the full host and EVERYONE can eat. I also love this idea because you have healthier options. I always chop extra lettuce for those that want to make a salad, and also do a side of tempeh and extra avo for those that are vegan or dairy-free.

Playlist options: Buena Vista Social Club or Stan Getz station 

3. Pizza Night (perfect for kids): This is another one we do often. I head to Trader Joes and load up on gluten-free flatbread, pizza dough and all other yummy toppings. We usually break the dough up in smaller rounds so everyone can make a personalized pizza. You can never go wrong with pizza, right?

4. Finger Foods + Drinks: If you don’t feel like doing a full meal, I love putting together mini bites and then making a fun, signature drink. Think stuffed mushrooms, bruschetta, veggie plate, turkey meatballs (I’ve even bought the chicken meatballs from Ikea before and served them with gourmet mustard- shhhhhhh- they are actually REALLY good).

5. Grilled Cheese + Soup: This is a favorite of mine in the wintertime. You can set up a full bar of topping options, including dairy-free and gluten-free options. I also like to make a large pot of a dairy-free, vegan soup (usually roasted tomato) to go along with the grilled cheeses.

6. Backyard Farm to Table: Perhaps one of the best ways to enjoy summer is a backyard celebration. Put together seasonal, locally sourced salads, maybe some grilled fish, and a great cheese plate.

Couples Getaway: Cannon Beach, OR

When the forecast was showing 68 degrees and clear skies on the coast, Tyson and I changed all of our plans and booked a hotel.

Everyone has a specific Oregon beachtown that they love, but to me, you just can’t beat Cannon Beach. It’s quaint, quiet and clean and has so much beach to play around on.

This was the first time we’ve done the beach together without Parker. While I definitely had my moments of wishing Parker was there with us, playing around in the sand, it was such a great, quick getaway as a couple. And… so needed.


So, let’s jump right in! Today I’m sharing my couples getaway itinerary in Cannon Beach, OR. Enjoy!!

DAY ONE

12pm – Arrive to Cannon Beach and head straight to the Wayfarer for a nice lunch or grab Crepes at Crepe Neptune and take them straight to the beach.

2pm – Check into the Stephanie Inn. Make sure to pay the extra money for the oceanfront room. In the end, it is WELL worth it.

3pm – Crack open a bottle of wine that you brought or head to the Inn’s happy hour downstairs that is all complimentary. Sit on your deck, sip some wine and don’t worry about a thing, just enjoy.

5pm – Take a nice beach walk together as the crowds start to disappear.

6pm – Order room service for dinner just in time to watch the sunset from your deck.

8pm – Head to the Warren House Pub to play some pool and listen to good music.

9pm – Make your way back to the hotel for their signature “nightcaps” down in the lobby.

9:30pm – Ask the front desk for a s’mores kit and head outside to the beach to eat.

10:30pm – Lights out! Don’t forget to keep the windows all open so you can fall asleep listening to the ocean. And if it’s a clear night, make sure to look up at the stars.

DAY TWO

8am –
Goooood morning! Hopefully you had a chance to fully relax and get a good night’s sleep. Put some comfy clothes on and head down to the breakfast area. At the Stephanie Inn, breakfast is included in your stay. I’d highly suggest asking for a tray so you can load up your yummy food and bring it straight to the room. Once again, eat on the deck. Also… feel free to ask the front desk for some champagne if you feel like the morning calls for mimosas!

11am – After you are done eating and getting ready for the day, ask the front desk for access to their beach cruisers and take the bikes for a ride right on the sand. If you are checking out this day, you can leave your bags at the front.

12pm – Ride the bikes straight to either Pelican Brewing or Public Coast Brewing to enjoy some local caught fish and chips and a taste of Cannon Beaches great beer.

1pm – Take the bikes back to the hotel and head back home.

Natural Beauty Favorites


Happy Sunday!

Today I’m sharing some of my favorite natural beauty products with you. I’ve spent A LOT of money trying products out over the last two years, and while I’ve been disappointed in many, there are quite a few that I just can’t go without.

As some of you know, switching over my old products to natural/non-toxic products has been quite the journey. I’ll be honest… I don’t know if I will ever be 100% on the natural train. I mean, never say never, but there are just certain things I think I just really prefer, like fragrance perfume or self-tanner instead of sunbathing. But, I am trying. Trying to be more mindful of where my products are from, trying to make sure to stay away from these ingredients, and taking into consideration the environmental impact of the things I use and purchase.

What I can say lately though is, I’m impressed! I feel like there are so many effective natural products now and it it so exciting when I find one I really love.

So, let’s dive into the ones I have been loving:

Favorite full skincare line: Epicuren 
This is hands down my favorite line. It’s not organic, but it’s a line where science meets nature and I have never loved products more than theirs! This is a great one for all skin types.

Favorite mask: Origins Original Skin
This one is a MUST. I can’t even begin to tell you how much I love this mask because it feels like an all-in-one mask. Moisturizing, brightening, and pore refining.

Favorite body scrub: Herbivore Coco Rose Coconut Oil Polish
This one is well worth the money! A little goes a long way, and I love that it is drier than other scrubs so it really help exfoliate.

Favorite deodorant: Schmidt’s Vanilla Rose Deodorant
This has been my favorite daily deodorant by far. I am obsessed with the scent! Some people I know prefer the jar version of this, so it’s really just a matter of preference. Either way, this one has been a winner in my book.

Christmas in California

It’s me!!! Gosh guys, I’m sorry I’ve been so MIA lately. I have been taking a lot of time off of social media and as much I miss writing and sharing life with everyone, it has been such a needed break. I honestly just felt like I had to get caught up on life. I have had so many things that I’ve needed and wanted to do, and I feel like unplugging gave me some time to finally do that.

Anyway, if you follow along on Instagram you probably noticed that we did Christmas in California this year. It was my first Christmas away from my family, which is funny because although I’m from San Diego, my sister and parents are all up in Portland now. Tyson has family down in Temecula though, so that is where we were for the holiday.

We did all my favorite California things on this trip:

Beach
Mexican food
A night at the Inn at Rancho Santa Fe
Golden Spoon on the regular
In-N-Out as much as possible
Ice skating outside

Using Essential Oils in our Home

Ever since I started working from home, I’ve been glued to my diffusor. I was burning a candle almost every day at my desk, only to realize that my candle wasn’t the best to breathe in (thank you to my sister, Kelly who owns Crosby Elements for explaining this to me). 
When I started doing some research prior to purchasing my diffusor, I was pretty impressed by the results people were getting when using essential oils topically and diffusing them. So, I shopped around and ended up getting a few things from Saje Wellness.

Here is my very honest opinion: 
I love everything.

I have found all of these items to be highly effective too. Specifically, the diffusor running in my office and then the topical oils in the traveling farmacy kit. I’ve been getting headaches more often lately (hello, work stress), and placing a little peppermint halo on my upper head and temples gave me immediate release.

For Parker, he gets a little stomach ache if he has too much dairy, so trying out “gutzy” with him was way too cute. While he can’t tell us for sure that it has helped, he has been asking for it when his stomach gets upset. His favorite part is applying it on his own belly : )

And for Tyson, the aches and pains guy, he thinks (but isn’t 100% confident just yet) that it actually was helpful for his back. He said he still needs more time to decide ; )

I’ve really loved learning about the power of essential oils. I’m always one to opt for a natural solution whenever I can, and it’s nice when you find things that actually work! I found Dr. Axe’s site to be really helpful in learning more about the power of essential oils. You can find his input here.

Gather: The Fancy Grilled Cheese

My friends can attest, I love me a fancy grilled cheese. And when it comes to throwing parties, I’m pretty sure you can’t go wrong serving these.

Pair a grilled cheese with a side salad and soup, and voila! Here is how to keep this budget friendly, simple to put together, and appealing for picky eaters and those friends that have a food intolerance.

Made to Order: A Fancy Grilled Cheese

Vegan cheese (my favorite flavors come from Follow Your Heart)

Quality Time

Good ol’ “quality time.” You know, those times when you are unplugged and present, soaking up whichever moment you find yourself in. Sometimes I feel like I’ve totally lost hold of that concept, and other times I ask myself, why don’t I do this more often?

It really struck a chord with me awhile ago when we were on vacation in San Diego. I had every intention to head to the pool and listen to some music while sipping my margarita. Tyson told me to go enjoy two hours solo while he napped with Parker back at the room, so I did just that. Two whole hours at the pool by myself seemed like a vacation all in itself! So, I got my towel, a front row chair by the water, and had my headphones and book by my side, ready to go. I ordered my drink, sat back, watched the beautiful setting and thought, heck, I need a picture of this. So, I strategically placed my beverage in my hand and positioned my legs perfectly for the picture. I took about… 20? Then, I sorted through those and realized my foot looked strange in each image, so of course, I took some more.

I’m sure many of you know exactly what I’m talking about right now.

I ended up taking a ton of pictures and then rolled over onto my stomach to “quickly edit them.” I opened my VSCO app, started filtering the image and then I posted it. After I posted it, I found myself caught up in scrolling through Instagram mindlessly for about 30 minutes.

There I was, an hour into my “me time.” Worrying about capturing an image and then falling right into the Instagram rabbit hole. Getting sucked into what others were doing, when right in front of me was the best moment of all.


Another time, I remember we were up in Seattle and I wanted a picture of Parker with the water and boats behind him. We had perfect weather, the perfect lighting, and his outfit was extra cute that day. He was a little sleepy and hungry, as we were on our way to dinner. I had to get the picture though… I didn’t want to pass it up. I had Parker stand there to take some pictures and the kiddo was not having it. But this momma wasn’t giving up. I literally bribed him with dessert, which I felt was a bit of a low point for me. Tyson (who is not into social media or excessive photo taking anyway), looked at me and was like… “Babe, please can we just enjoy this right now without having to take a picture? Parker clearly doesn’t want to do this.”

And that brings me to the dilemma. The choice between documenting the moment vs. the mental memory and just enjoying it. 

So here is my rant: Those two moments really impacted me. Specifically with the use of time. Not just on social media, but the time I put into taking pictures and documenting everything in general. As a very visual person, pictures mean the world to me. I love taking them, I love editing (the before and after) and I love reminiscing. But the real question is, can we just dial it back a bit?

I am the first person to be guilty of all of this. But can I challenge you? The next time you have really awesome plans or an event, try to NOT document any of it. In fact, try unplugging from social media and the news for a whole weekend and see how you feel. Anytime I have done this, I feel more content and present than ever.

I just got done unplugging for 3 days from emails and social media and I honestly haven’t felt that content with life in a long time. I was present with my family; we decorated the house for Christmas without having to document it to the world; I felt like I had more time in general; I made more time for things I don’t have time to do as much like taking a walk with the family, cooking, and crafts; AND, I felt less anxious, I slept great, and I didn’t complain once about what I want or don’t have.

I think this is the most troubling part about social media. We are being bombarded with all of the coolest things people are doing and subliminally we are saying, “I want to go there,” “I want a house like that,” “Gosh she has the perfect body,” “That family does so many cool things together, we need to do more of that” etc. etc. etc.

This can’t be good for us.

So (end rant), here is the point: Social media definitely has it’s perks. The connection, the inspiration, the creativity. Heck, I run two businesses based off of social media and I truly do love sharing images that I take and like with so many people. The point is to give yourself a break. Focus in on that quality time. You, your family, your friends, your life… they all want it. They all need it. And they all deserve it.

I strongly encourage you to try unplugging for a few days. Not just one day, try and at least go two. And pay close attention to how you feel. I’m telling you, it’s one of the healthiest things we can do and you just need to experience it for yourself.

Our Winter Pantry


‘Tis the season for warm, nourishing foods. Notice how your body is beginning to crave warmer, heavier meals? Listen in. Just as the seasons change, so do our bodies. The more we pay attention to the foods our bodies crave, the better we tend to feel.

Have you tried to eat intuitively? Even just for a day, I encourage you to give it a try. Wake up in the morning and take a minute to really think about what your body wants and craves. Be careful here, because you might be getting misinformed by the sugar effect. Think less about indulging, and more about what you feel would really nourish your body.  Then, carry that same approach for the rest of the day. Are you hungry for a snack? Listen in. Sometimes a nice bowl of miso soup in the wintertime will satisfy you rather than a protein bar or smoothie.

Here is a sample day meal plan that might satisfy you during the winter months:

Breakfast:
Oatmeal with walnuts, maple syrup, chia seeds and homemade cashew milk

Lunch:
Massaged kale salad with pumpkin seeds, wild smoked salmon, shaved carrots and a miso vinaigrette

Snack:
Apple slices and almond butter

Dinner:
Roasted chicken with carrots, celery, chard, and potatoes

After Dinner:
Dark Chocolate and some ginger tea
