DIY | Rose Salt Scrub

I don’t know about you guys, but a good body scrub is my best friend. I started using the one by Fresh when I was pregnant and I was hooked. Since then, I’ve tried a few others, but none really compare. Since the Fresh scrub is so pricey and because I’m a notorious over user when it comes to products, I tried to find one at a better price point but have yet to love one like I do theirs. 

Here is what I don’t love about some scrubs: They don’t smell good enough. Or, they have way too much oil, not enough scrub (if you know what I mean). OR… they just have way too many crappy ingredients – no thanks!
So when I say that I just made an amazing homemade body scrub, I come from a very critical background. 
And honestly, this is one heck of a body scrub that was so easy to make. You can head to a local natural food store for these ingredients or if you live in Portland, I bought these at Fettle (formerly The Herb Shoppe).
1 jar
1 cup hawaiian course sea salt 
1/4 cup melted organic coconut oil
1 tbs apricot oil
2 tbs finely chopped dried rose pedals
6 drops of rose essential oil
*optional: add a few drops of lemon (energizing) or bergamot (uplifting) essential oil in the blend
Mix ingredients with a fork or spoon and store in an airtight container for up to two months. 

Christmas Tree Cutting, Oregon Style


One of the best things about living in a place like Oregon, is that you get to go directly to the tree farm to cut down your Christmas tree. There are so many great places around where we live in Portland, but I specifically love Quail Creek Ranch. They’ve just done a great job organizing everything and they have everything you need there to make it an experience too.

Each year after we get our tree, we make our way to McMenamins Rock Creek Tavern for some food and drinks. This place is as cozy and Christmasy as it gets! If you live on the West side of town in Portland, you’ve got to check it out.

What kind of tree tradition do you have? I honestly didn’t really have one until I moved to Oregon. In San Diego we used to get ours from Home Depot (LOL).

Lately: My Podcast Obsession

I have been on a big podcast kick lately and I can’t even begin to tell you how great these are in traffic. Why it took me so long to actually start listening to these is beyond me because I’m obsessed! So, today I want to share with you guys what my favorite episodes have been lately.

My Holiday Home with Target

I love decorating for Christmas. I honestly have to restrain myself over and over again from decorating before Thanksgiving. I just love it too much! But the wait is always worth it.

This year I stocked up on some really great pieces from Target. When it comes to home decor pieces, Target and Homegoods are my go-to’s, especially for seasonal pieces.

I don’t love the traditional color red at Christmas time, believe it or not. I love to go with a lot of greenery and whites then some gold and/or silver. Maybe just a pop of red here and there. And of course, anything that screams cozy. Plaid, fur, etc.

My biggest problem is that we don’t have a fireplace OR a staircase. We live in a townhouse! So, hanging stockings are pretty frustrating and I need some help! If you are in a similar setup, where do you hang your stockings?

Oh, and while I’m talking about home… I have SO loved coming home at listening to Starbucks Christmas classical station on Spotify. Pour a glass of wine, light your favorite candle, turn the music on and you’ve got yourself a perfect at-home holiday evening.

The Healthier Hot Chocolate

Nothing says the Holiday’s like a cup of hot chocolate. I seriously love the nostalgia of having one, but I don’t miss the unnecessary ingredients I remember consuming as a kid.

The ingredients typically looked like this:

Ingredients: sugar, corn syrup, modified whey, cocoa (processed with alkali), hydrogenated coconut oil, nonfat milk, calcium carbonate, less than 2% of: salt, dipotassium phosphate, mono- and diglyderides, artificial flavor. Contains milk.

No thanks!

Now that I know how easy it is to find healthier brands these days and how easily you could just make your own, I no longer to resort to the bad stuff.

Below are my two favorite healthy ways to enjoy hot chocolate. Both free of dairy, low in sugar, and extra tasty.


The Easy Way Hot Chocolate:

1 packet of Treehouse Sea Salt Drinking Chocolate (local Portland company!)
1 handful of Dandie’s marshmallows
3 ounces vanilla almond milk
3 ounces of water

Directions: 

Warm up the water and almond milk.

Add in 1 packet of drinking chocolate.

Mix together.

Add marshmallows on top and enjoy!

Homemade Dairy-Free Hot Chocolate: 

1 cup unsweetened almond or cashew milk
1 tbs. unsweetened cocoa powder
2 tbs. chocolate chips (you can use dairy free)
1 tbs. coconut sugar (or raw sugar)

Directions:

Warm up milk in a sauce pan.

Transfer to a mug.

Add in cocoa powder, chocolate chips and sugar and whisk together well.

Top with some Dandies marshmallows and enjoy!

Slowing Down

Happy Thanksgiving everyone! I am currently sitting on the couch with a cozy blanket while the food is in the oven and the rain is pouring down outside. Parker is next to me, getting a head start on Christmas by watching Tigger and Pooh Christmas episodes.

Lately, I have been spending a lot of time slowing down and off of the internet, so I apologize if I haven’t been posting as much. I’ve actually become a little obsessed with the idea of slowing down, particularly because the more I do so, the more I’m realizing how badly I needed it.

Between work emails 24/7, blog posts, social media, and the moments where I’m just trying to cross things off my to-do list rather than be present… it is just so dang easy to get distracted these days. It feels like this constant state of overdrive. We live in a world now where it is so easy to get wrapped up in material and digital things, rather than moments and tangible experiences. We’ve lost site of the things right in front of us, only to look at things through a screen…


I don’t know about you, but sometimes I fantasize about a life outside of the city, on a farm, or somewhere that life feels a bit old school. A place where the kids play outside all day, we can take naps in the middle of the day and dinners last all night long. And then I’m reminded that all of this is really up to me. Obviously some things will look different; my job still requires me to be online most of the day, my blog still requires content and social engagement, but it doesn’t have to consume my life. That is something I can control.

Slowing down might look a little different for each person, but for me lately it has looked like logging into Facebook maybe only once a week, not reading the news except main headlines, leaving my phone upstairs and out of sight when I get home from work, deleting people who I’m not friends with or those that don’t inspire me on social media, listening to more music, listening to more podcasts, reading more often, trying (I still suck) to meditate once a day, getting to bed earlier, spending more present time with my family and doing all things at a slower speed.

So, cheers! Cheers to a day of gratitude, slowing down, and doing what most great cultures do on a regular basis… feast and drink all night and spend time with friends or family, in person. : )

A Weekend Away: The Oregon Coast

Last week Tyson and I, along with my sister and her fiance, all stayed at the cutest little house in Arch Cape. The weather forecast was rainy and stormy, so we packed the car up with board games, blankets and some good books. If you haven’t been to the Oregon coast in stormy weather, I highly suggest it!

We bundled up in the house, listened to music, played games, made some fancy cheese plates, and lit one of my sisters candles. Her “earthly dwellings” candle was a perfect fit to our night. And naturally, when you are in such a cute house, you take photos of everything. Like candles and dogs and such…

The next morning we woke up to a big break in the clouds and some sunshine and spent the morning drinking mimosa’s and walking along the beach…


The Oregon coast is always a good idea.

Road Trip (Part Two): Park City and Boise

I’m almost in tears just writing this, because honestly- as I recap our road trip, I keep thinking about how the best part of it all was having so much time with Parker. This was the first solid chunk of time I’ve been able to spend with him since I was on my (very short) maternity leave. I had two weeks straight (TWO STRAIGHT!) with him. Full days! And it was heaven. He’s honestly just so much fun and I’ve never loved something so dang much in my entire life. I don’t know how else to describe it, but I’m going to wipe my tears now and pull myself together (hashtag momlife?).

Okay, okay, back to the road trip…

Thanks to a cooperating kiddo, we decided that rather than driving up back up the California route, we’d drive up through Nevada, Utah, Boise and then back to home Portland. Whew!

Tyson and I had been wanting to see Park City, Utah and that is exactly what we did. We drove straight from Temecula, CA to Park City, UT with only ONE stop in St. George. At this point we were basically professional road trippers, so the one-stop on a 10 hour drive just felt like the “advanced” thing to do. Only natural…

When we arrive to our hotel, The Chateaux in Park City, we both just did a big “sighhhhhh.” It felt so great to be there not only because we were so wiped out from driving, but because the place was SO beautiful and so cozy.

We rolled out of the car to check in, all while I had a massive water mark on my butt from spilling water in the car and Parker was walking around with a full blowout diaper. I tried to keep my cool and effortlessly cover up my backside with my purse while I was standing at check-in, rather than explain to everyone that I DID NOT pee my pants and it was just water… All while Tyson was unloading the ridiculous amount of luggage that comes with having a kid and wife that is a notorious over-packer.

Anyway, we got settled into our room, headed out to a few Breweries in town and then came RIGHT back to hang out in the room. After so much traveling, sitting in a hotel bed with the fire on while drinking a glass of red wine sounded perfect, so that’s what we did. They even set Parker up with a crib and blanket, so he felt riiiiight at home.

The next morning we packed up our stuff for the millionth time and headed straight for Boise, Idaho to stay with my close friend and her husband. We didn’t get in until late, but since it was our last night of this long road trip, we had to eat our favorite restaurant, Juniper. This place is just the best! And so is Boise for that matter. I’m not quite sure what it is about that place, but Tyson and I love it there.

And….

home.

It’s always nice to be back home.

Road Trip (Part One): San Fransisco and Carmel

Almost two weeks ago we said, what the heck, and drove our way down the west coast. I literally googled “are long car rides a form of torture for toddlers?” And “20 ways to entertain a toddler in the car.” We packed our car with just about all of our belongings and kept Parker entertained with his tablet full of tv shows, a few new books and LeapFrog games. This kid, I tell ya… he was SUCH a champ. We were so dang relieved and so thankful.

We left at 4am so Parker would just go right back to sleep, which he did until about 7:30am. And that tablet, that I swore I would never give my child… LIFESAVER! I take back every comment I previously made about those things. We propped it on the back of the headrest and we suddenly became “one of those” cars with the tv. Whatever! We managed to make only one stop for lunch and gas and then…

First stop, San Fran! Well, more like Tiburon (on the other side of the golden gate bridge). After driving over 10 hours the last thing we wanted was a big city to sleep in. And boy were we right.

Tiburon is SO charming, so relaxed and very quiet. Just what we were hoping for.


We stayed at the Lodge at Tiburon and were greeted at our room with the tastiest cheese plate I’ve had in a long time. I immediately put on the hotel robe and popped open some champagne while I procrastinated on doing anything else. Vacation mode ON. We didn’t even leave the hotel that night. We ate dinner at their restaurant, Tiburon Tavern, and I’m not kidding- that was the best meal I’ve had in a long time! We went all out. I even had a steak, which I haven’t had in a LONG time (I stopped eating cow/pig awhile ago). The waiter gave us a whole rundown on where it came from (just up the road), how it was raised and how they treat their animals. Like straight out of the Portlandia episode, but in the best way possible. We were really impressed and can’t wait to be back.

The next day we drove our way down the coast. We stopped in Santa Cruz to see Tyson’s cousin, and then drove by Capitola. What a cute place!

Then, we finally made it to my favorite town, Carmel.

Carmel is like a storybook. It has always been a family favorite of ours growing up and it proved to be the same, charming town like I remember.

We stayed at the Hotel Carmel, which was recently renovated. This is one of the best places I’ve stayed in a long time and I will definitely be back. Quaint, cozy and decorated really well.

We checked in, walked around town, then put Parker down for a nap. The best part about our room was that it was on a lower level right next to their outside fire pit. Our video monitor was able to reach it, so Tyson and I walked outside and had a glass of wine while the little man napped. Major plus!! We ended up ordering takeout that night and eating it in the room, because why the heck not?

The next morning the boys stayed in bed late while I went for a run down to the beach. It felt so refreshing to see the ocean and I soaked up every little bit of alone time I could!

A Healthy Apple Crumble

What’s fall without some apple picking? If you are like me, you go apple picking and in the midst of the thrill of loading your bag with apples, you end up getting a ton (emphasis on ton) of apples and then return home questioning what exactly you thought you were going to be making with those apples. As if I ran a whole restaurant or something…

So, apple crumble for dessert every night for the next month!


I mean, you really can’t get enough of this stuff anyway. I also like to justify this version of an apple crumble below as a totally acceptable breakfast.

Basically like oatmeal, just with butter. : )

A Healthy Apple Crumble

Ingredients:

6-8 apples
1 1/2 cup rolled oats
1/2 cup almond meal
3/4 cup coconut sugar
1/2 cup melted butter
1 teaspoon cinnamon
1 pinch of sea salt
+ 1 1/2 tbs of coconut oil
*optional 1 tbs of gluten free all purpose flour

Directions:

Preheat oven to 350F.

Chop apples into small cubes and place at the bottom of an 8×8″ baking dish.

Coat the chopped apples with the coconut oil as evenly as possible.

Meanwhile, in a food processor, add in all dry ingredients and pulse until well-blended.

Once processed, transfer to a bowl and add in melter butter. Mix well until a crumble/dough-like texture appears.

Then, take the dough mixture and cover the baking dish filled with apples to create a nice even layer over the whole dish.

Place dish into the oven and bake 25-35 minutes or until top is slightly golden. Remove from the oven and let sit for about 10 minutes before serving.

I highly suggest pairing this with a scoop of vanilla coconut milk ice cream or organic vanilla ice cream. hehehe
