Mother’s Day

I don’t know about you other mama’s out there, but my Mother’s Day request was very specific. I’m not really one to love surprises (serial planner problems). So, my requests? Bellini’s, Gluten free eggs benedict, and to plop my booty in a lawn chair and sit out in the sun, pretty much all day and read a LOT of magazines.

Seriously. I closed my eyes and asked myself what sounded incredible ( I mean, other than being on an island with a cocktail) and this is what I came up with.

Hopefully YOU are doing something nice for yourself, for your own mama or for a great mama you know (or all the above). I can truly say that it is an honor to be Parker’s mama. My family is my entire world, and I have never been so full of love and joy until these two came into my life.

And a big shout out to my own mom. I’m becoming more like you every day. And while that is slightly frightening (lol), I also feel very lucky. I love you mama!

Cinnamon Waffles (Vegan + Gluten Free)

Nothing says weekend to me these days like some waffles with the family. You know, windows open, coffee brewing, Mickey Mouse Club playing and that big plate of waffles calling your name. I actually just recently broke down and finally got us a waffle maker. I’m not one for having a ton of kitchen gadgets and I figured a waffle maker was kind of like an ice cream maker. You want it when you want it, but it basically sits there in the back of the cabinet until you realize, “oh my gossssh- I totally forgot about this thing!” 
Boy was I wrong…

We’ve had the waffle maker since Easter and we’ve used it almost every weekend! My go to mix has been the Kodiak cake mix. I use the oat flour kind, which is packed with protein and super tasty.

However, this weekend I took a stab at making waffles by scratch and can I just say…wowza! This recipe that just happens to be dairy, egg and gluten free is going to change your world. These are honestly the best dang waffles I’ve ever had.

Cinnamon Waffles (Vegan and Gluten Free)
serves 3-4

1 1/4 cup unsweetened almond milk + 1 tsp apple cider vinegar
1/4 cup olive oil
1/4 cup maple syrup 
1/2 cup gluten free rolled oats
1 3/4 cups gluten free all purpose flour
1 1/2 tsp baking powder
1 tsp vanilla 
pinch sea salt
3 shakes of cinnamon

Directions:

Combine almond milk and apple cider vinegar together in a small bowl and set aside for about 1-2 minutes.

Mix together dry ingredients in a separate large mixing bowl.

Add in the almond milk/apple cider mix as well as the other wet ingredients.

Whisk together well.

Turn on waffle maker (I like to turn mine to a 4).

Spray waffle iron before each pancake with spray oil (I used spray coconut oil).

Scoop out mixture according to the size of your waffle maker. (Mine is a smaller one, so I used about 3/4 c. of mix each time).

Once finished, top with your favorite toppings – bananas, strawberries, coconut shavings, etc). We kept ours simple with some Earth Balance butter and maple syrup.

So You Want to be a Fitness Model

For those of you who may not know, my big girl job is as a booking agent for one of the top sports + lifestyle modeling agencies in the country.

I constantly get asked: What does a fitness model really do and how should one get started? So, I’ve given you my top tips to becoming a fitness model and actually be successful at it! Get your pen ready.

You type in ‘fitness modeling’ on google and you will most likely find a few agency websites mixed with a LOT of body building and physique competitors sites. That isn’t the type of fitness modeling I’m talking about. I’m talking about the striking Nike.com model or the strong, beautiful babe you see in an Athleta catalog. Believe it or not, generally those models aren’t just a pretty face. These companies have sought out models that have true skills behind their great look. This is because when they don’t have those skills, a real athletic person would easily be able to spot that. We’ve all seen those models with terrible running form or holding yoga poses incorrectly!

So, let me first say this: These are all general tips. There are unique situations where these tips might not apply. But, with that said, as the former model scout turned booking agent, there is very straightforward criteria to what we look for when it comes to new models. So, follow these tips below and stay optimistic and I just might be seeing YOU in the next New Balance campaign!

1. Lean + tone: There is really no better way to describe the type of shape to be in. Being lean, but having definition is what we hope to see. In other words- eating well, taking care of your body and being strong is SEXY. You will find our most successful models truly walk their talk.

2. Take some great digitals: Most modeling agencies will want to help guide you to get the right photos for your portfolio. The best way for you to get noticed at a modeling agency is for you to be as naturally yourself as possible. This means: light makeup and natural hair. Then, have a friend take some great images of you with a good camera or even an iPhone. Digitals should be full body images of you showing your front, side and back view in a bikini or sports bra and shorts. I highly suggest taking these just before dusk in your house with a plain wall as the backdrop or outside. Good lighting will be your best friend!


3. Flaunt your skills: Former college athletes are some of the most successful fitness models. Why? Because they have a lifetime of skills and these fitness brands LOVE that. Are you an advanced surfer? Or an advanced yogi? Make sure to mention that, or even better – send a video or image of you showing off your skill!

4. Gain some experience: This is not to say you should have a modeling background, but more so, practice! Ask your photographer friends (or heck- even your best friend) to take some photos of you. Getting comfortable in front of the camera takes time, so the more you can practice, the better!

5. Sign with a reputable agency: Doing your homework on an agency is always important. If you question the legitimacy of one, I would always refer to their social pages to do some more research. Working as a freelance model can be tough, and I see time and time again models having more success when they find the right agency to work with.

6. Let your personality shine: Looks mean a lot in this business, but personality means just as much. There are a lot of good looking people out there, but there are many great looking models who end up unsuccessful in this business because they have a poor attitude. Be someone an agency and your dream client would want to work with. Being professional, hardworking and having a humble, easy going personality will take you further than looks, even in the world of modeling!

Remember to be realistic about modeling. Due to the fit of sample sizes, generally agencies won’t accept women under 5’6 (or men under 5’10). Also, keep in mind the sweet spot  for most fitness modeling agencies are men and women ages 18-25.

Advice to my 25-Year-Old Self

When I say this is advice to myself, I mean this quite literally. These were the things I wrote down as reminders to myself as not only encouragement, but also documentation of what I had come to realize as a single, 25-year-old. Now that I’m almost 30, I can honestly say that this advice still has the same relevance, as I think it would for anyone. Let’s take a look:

1. Chase your dreams (seriously): All those things you’ve always wanted to do, do them! I asked myself awhile back, “If nothing mattered- finances, education, etc.- what would you want to do in life?” This isn’t to say we shouldn’t be practical, but too many of us have a job or do things in life based on worldly suggestion. You were created for a reason, and most likely those things you’ve always wanted to do are things you would be great at and things that would bring you a lot of joy. Don’t be lazy- go for it.
2. Get outside: I truly believe that we don’t spend nearly enough time outdoors as we should. There is something transformative about being in nature. I didn’t completely understand this until I moved to Oregon from California. Scientists call the reason nature makes us feel so good, biophilia, or the innate affinity humans have for other living things. A few times per week strive for more walking, more exploring, more scenery, more water… I promise you will feel a huge difference.
3. Be you: We have all been uniquely designed. We don’t look, act, or sound like another person for a reason, so we must stop trying to. Too many days and hours are wasted comparing ourselves to other people. The moment you let go of everything you aren’t and accept everything you are (authentically to you), life will get that much better. Don’t give one damn about what people think, just be you!
4. Take care of yourself physically: Eat well and get moving. Remember that there is no “one size fits all” diet solution. The more you fill your body with the right things, the less you will crave the bad. You’ve got to get moving too- nothing feels better than living an active life. Your mind and body will thank you and you’ve only got one body, so be good to it!
5. Take care of yourself emotionally: Cultivate good relationships, build community, exercise your mind, meditate, think positively, get enough sleep and talk about your feelings. If something is bothering you or not going well, don’t gloss it over. Get to the bottom of it before it gets to be a larger issue.
6. Let go of the past: All of the crap, all the things people told you that you were and were not (negatively), all the pain… you must let it go to move forward. There have been multiple times in my adulthood that I have referred back to a name someone called me or a phrase someone had once spoken to me. I’m in awe that I have still, after all these years, held onto it. L E T I T G O. It does not and will not ever define you, you must not let it.

7. Be honest: Yep, honesty still is the best policy and frankly, it feels good. To me, being honest is telling the truth, having integrity, being sincere, and being reliable. Doing the right thing at all times and in all circumstances, whether or not anyone is watching.
8. Live simply: Remember the things that matter in life. Spend time with family and friends, unplug from social media (not allowing myself to go on first thing in the morning and last thing at night has been the best decision I’ve made), spend time outside,slow down, breathe, and find joy in the little things life has to offer… Oh, and wherever you are, be present.
9. Let go of fear: So many of us are crippled by fear of the unknown. We can’t get too far if we don’t take a chance. So many people like to stick in relationships, jobs, friendships, etc. because its comfortable. I sure know I have done all the above and I can tell you that the most growth I have ever seen in my life has come from the things that made me uncomfortable.

10. Have a blast:  Possibly my favorite point is to enjoy life. Get out there, meet people, do things, try things, travel, have fun, laugh more and live it up. I love my Mom for many reasons, but one thing I love so much about her is that she has always worked hard, yet never passes up a chance to have a good time. The best thing she has said to me was to always live life and enjoy it, even when times are hard. She said, “Linds, I look at my life and know that I have LIVED.”

Friday Favorites

I am in full Spring swing right now! How about you? We have been having beautiful weather in the Northwest (this is a big deal up here) and sun is practically my coffee equivalent. I always get inspired to do all kinds of things when the weather is nice. So, off to the garden I go. And I’m leaving you with some of my favorites this week.

1. Sakara Cleanse (above): This is a major spring clean for your body. I did the three day plan and I loved every bite, which you might have seen on my snapchat (lindsayinpdx).

2. Barre3: I finally bought the membership. I struggled to justify spending $160 a month on this, but my husband kindly reminded me that the health of my mind and body is worth it. Love you, babe.

3. Spring Gardening:  Just as I do with having pets, I whole heartedly believe that this is important for your general wellbeing. I went all out at my favorite local nursery, Cornell Farms and stocked up on a bunch of new herbs and flowers.

Quick, Easy + Healthy: A Day of Meals for a Toddler

It’s hard enough planning meals for us adults, let alone our kiddos (am I right??) And since I’m not with Parker during the day throughout the week, I try and do all I can to make sure he has plenty of good food to eat. It is SO easy to reach for a box of mac n’ cheese or feed him starches all day. But, considering the fact that I get to control the food he eats (for now…) I’ve tried to put a lot of thought into things that are quick and easy to put together (and also taste great).

Just like I do for myself, I pre-cut a lot of fruit for the week and always make extra dinner for lunches the next day!

Here is a sample day of food for a toddler: 


Breakfast:
5 oz organic whole milk
Scrambled eggs with a side of avocado and sliced honeydew melon
*We share! Tyson and I make a big batch of scrambled eggs with spinach, mushroom and onions and Parker will eat the same.

Snack:
Lightly salted snap pea crisps or HappyBaby Puffs
Lunch:
Sunshine Burger heated with some organic green beans (all from frozen)

*And of course he is drinking water all day long

Snack:(optional)
Sliced almond cheese (soy free) and some raspberries
*Sometimes he needs this second snack, sometimes he doesn’t.
Dinner:
Salmon, sweet potato and veggies
6 oz organic whole milk 
*He normally just eats what we make for dinner

Tropical Chia Seed Pudding

Happy Monday!! The sun is out and all I want to do is eat fresh fruits! I have been wanting to make some chia seed pudding for quite some time now. I’ve pinned just about every type of chia seed pudding recipe out there on Pinterest, but I still never got to making it.

So, when the sun peeked through this past weekend, I thought it was time! And seriously, I will be making this allllll the time now. It is a great, clean and healthy meal option and it’s also perfect for your little one. Parker loves it!
Tropical Chia Seed Pudding
serves 2 and a 1/2 (a baby hehe)

4 tbs chia seeds
1/2 cups coconut milk (canned)
1 1/2 cups almond milk
6 drops stevia
Chopped mango, pineapple and unsweetened coconut shavings for the topping
Directions:
Stir together the almond milk, coconut milk, chia seeds and stevia. 
Place in a container and set aside. 
Stir after about an hour to mix ingredients again. 
Let it sit overnight in the fridge or eat after about 2 hours of sitting. 
Place in small bowls and top with your tropical fruit and enjoy!

Day Trip: The Columbia Gorge (Family Style)

From Portland, you can hop right on the 84 East and drive about 20 minutes out to where the Northwest begins to really show off. It is such an easy day trip and really never gets old, which is why this is one of our top places to head for a quick getaway.

1. First stop – Wahclella Falls: Grab your Ergo carrier and off you go! This hike is the perfect distance to get some good exercise in, see a pretty view and navigate easily with a little one.

2. Now that you’ve worked up an appetite, keep driving the 84 East and grab lunch at Full Sail Brewing. I know there are a bunch of great places to eat in Hood River, but I still love Full Sail and how kid friendly it is. They have a good patio for when it is warm, their food is great (tempeh burger all the way) and I throw all my gluten free sensitivities aside and order a Session beer. It is my absolute favorite.

3. Grab a treat and coffee at Pine Street Bakery.

4. Then, before heading back home, make sure to do a quick stop at the Hood River Lavender Farms. It is SO worth a visit, even if it is a quick one.

I am so thrilled to be featuring the talented and beautiful, Christal from the Nutritionist in the Kitch blog! I typically find myself staring and drooling at her recipes while I’m at work. She’s not only a healthy recipe magician, but she is also a practicing holistic nutritionist in Canada as well as a massage therapist. Yeah, she’s that awesome! Read below to check out my Q & A with Christal…

1. Tell us a little bit about yourself, your blog, where you live, what you love to do : )

I live in Edmonton, Alberta, with my hubby and our little cat – we don’t have any kids, yet.. but it’s in our 5-year plan! I love to stay active, I’m at the gym 6 days a week or doing something active outside when it’s nice, and I LOVE to travel – I’ve been to Southeast Asia, Central America, Western Europe, throughout the USA, and we have Eastern Europe in the plans for next year!
My blog is my space to really share my passion for nutrition, food, and healthy living! I’m a firm believer of the “you are what you eat” motto, and I truly try to fuel my body with fresh, wholesome, natural foods each and every day to keep my body feeling energized, healthy, and happy!
On Nutritionist in the Kitch, I can create and share recipes that do just that. My nutrition practice is wonderful! I get to work with clients who are looking to discover optimal health through the foods they thrive on, and seeing them do that is incredibly rewarding! My weight loss clients are especially rewarding as over a period of time I get to watch them transform, learn, and grow (or shrink, I should say! *;) (winking) . Nothing makes my day more than watching a clients face light up when they step on the scale and see what they’ve accomplished!

2. If you could give someone 5 main health tips to follow, what would they be? 

1) Eat whole, unrefined, natural foods 80% of the time, and allow yourself some indulgence 20% of the time – life is all about balance. 
2) Get your fiber – aim for at least 30g of fiber per day from whole grains, fruits, and vegetables! A happy digestive system is a great thing!
3) Keep moving – exercise should be part of EVERY DAY, even on ‘rest days’ you should be doing something like stretching or yoga – exercise should be like brushing your teeth – wouldn’t go a day without it!
4) Love yourself – it’s too easy to get down on ourselves and have negative self-talk all the time – every morning when you wake up, take a look in the mirror and compliment yourself!! Positive thinking leads to positive actions which lead to positive habits!
5) Sleep! It’s so important to get quality sleep every night to fuel your body and support your immunity – aim for 7 hours every night!

4. I noticed that you take digestive enzymes as supplements. Are those a supplement most people could be taking? 

I have dealt with digestive issues (IBS) since I was a teenager – it wasn’t until I first got into holistic nutrition that I had some insight into WHY I was always having troubles, even after numerous unanswered trips to the doctor! So, I take digestive enzymes and probiotics daily, as they have both made a huge improvement in my digestive health. The enzymes help me break down macronutrients better and absorb nutrients fully, and the probiotics keep my digestive system running smoothly! It’s actually very common for many people to suffer from poor digestion due to lack of enzyme production in the body so I believe most people WOULD benefit from supplementing with them. That being said, every body is unique and it is important to research anything (supplement, OR medication) before taking

5. What is the best advice you would give someone having a hard time losing weight? 

Talk to/seek out a professional! There is something to be said for having professional advice from someone who can set you up on a plan or program that is suited to your individual needs and lifestyle rather than just following something out of a book or magazine – also, accountability is HUGE! It may be a financial investment, but it’s truly an investment into a longer life, happier you, and better health!

6. Go-to meals/foods when eating out?

I pack most of my foods with me wherever I go, so I typically only ‘eat out’ about 1 or 2 times in a month (Saves $$ which is great, and I love to cook!). When I do eat out I usually go for a salad with lean meat and side dressing, or an entree like fish, chicken, or tenderloin (local/organic if possible) and a big side of steamed vegetables, and pass on the carb – not that there is anything wrong with carbs, but typically restaurant carbs (potatoes, rice) are FULL of butter/oil/cream, etc!

7. Your typical breakfast?

I go through phases – right now it’s 1/4 cup plain oatmeal mixed with ground flaxseed, cinnamon, and a pinch of stevia, cooked with water and topped with berries, and an omelet on the side made with 1 whole egg, 1/2 cup egg whites, salt, pepper, dill, and hot sauce! YUM! I also love overnight quinoa & oats, protein pancakes, protein waffles, and protein french toast which can all be found on my blog recipe page!

8. Favorite snacks? 

I love plain Greek yogurt with fruit and nut butter, apples and nut butter, hummus and veggies, protein smoothies (made with all natural protein powder – my favorite is North Coast Naturals brand), and I’m a sucker for tortilla chips and salsa!!  Oh, and Kettle Corn!!!

9. Describe your ideal “great day!” : ) 

Really, an ‘ideal day’ for me is’ any day that I am exploring somewhere new in the world’! As I said, I LOVE to travel and any chance I get to be in a new place with a different culture, food, environment, and way of life is ideal! Traveling is incredibly humbling and really something I have been so blessed to do so much of!
