Coffee Crumble Cake (Gluten Free + Vegan)

Happy Monday!!

I tried to wake up a little bit earlier today to get my morning started right: A cup of coffee, some coffee crumble cake and my notebook to jot down my to-do’s for the week. (I’m such a nerd when it comes to to-do lists, but I honestly can’t function without them!)

I’m typically an egg girl in the morning, but every now and then a pastry type food sounds so yummy with coffee. So, this morning I opted for some of the crumble cake I made yesterday.

When it comes to baking, I’d really rather just whip up something simple and know what ingredients are going into it. But, after I was accidentally introduced to the completely allergen free, all natural mixes by The Cravings Place, I am pretty much obsessed.


This company is so unassuming, but I promise you it is so. dang. good. I first tried the Ooey Gooey Chocolatey Chewy Brownie Mix and I couldn’t believe how tasty they were. I even got my very picky. Better Crocker only, brownie-loving Dad to make the swap.

This morning, after indulging in the their crumble coffee cake I was just as impressed!

Tips: Add cinnamon and vanilla to the topping before baking.

Here is the downside. It is not easy to buy their stuff! Unless you live in Oregon, that is (they are based in Bend, OR).

Grain Free Snickerdoodle Cookies

Happy Sunday! How is everyone’s weekend going? 

Well, clearly I did some baking, so mine is going well! Tyson and I were able to get a decent night sleep the last few days, so that is definitely helping my batteries recharge. We also got to head out on a date last night, leaving Parker with the Grandparents. We went to Edgefield, one of our favorite places around town. If you come to Portland, it is a place you have to visit! 

Okay, let’s get to the cookies… So prior to our date night I whipped these up. I found the recipe on Delighted Momma’s blog and altered a few things. And wow, these are seriously good and made without flour. Here you go!

Grain Free Snickerdoodle Cookies

1 1/2 cups of almond meal
1 tbs of coconut flour
1 egg
1/4 cup of honey 
1/4 cup of melted coconut oil
1/2 tsp of cinnamon + extra for rolling dough in
1/2 tsp of nutmeg
1/2 tsp of baking soda
1/4 tsp of sea salt
1-2 tbs organic cane sugar (for rolling and sprinkling on top)

Directions

Combine all the ingredients together in a bowl.
Cover the cookie dough and place in the fridge to chill for one hour.
Preheat oven to 350 degrees.
Roll the cookies into small balls and coat in cinnamon and sugar.
Use the bottom of a cup or mason jar to flatten them out.
Place cookies on a parchment lined cookie sheet and bake for 10 minutes.
Let the cookies cool and sprinkle them with more sugar!
